When I want a cake fix but haven’t got the inclination, patience or ingredients to make cake, pancakes hit the spot. I have a million and one delicious pancake recipes to share. This one is great for brunch or dessert.
RECIPE: COCONUT & STRAWBERRY PANCAKES (vegan, vegetarian, dairy-free)
Recipe: Coconut & Strawberry Pancakes (vegan, dairy-free)
Ingredients (makes 8- 10 pancakes):
Vegan pancakes:
- 1 cup of self-raising flour
- 1 teaspoon of sugar
- 1 teaspoon of baking powder
- dash of salt
- 1 teaspoon of vanilla extract
- 1 tablespoon of melted coconut oil
- 1 cup of Koko coconut milk (this is a dairy free milk alternative and is different from the tinned stuff)
Toppings:
- Cup of sliced strawberries
- 3 tablespoons of desiccated coconut
- Maple syrup
- Coyo (dairy free coconut yoghurt)
Instructions:
- Place all the pancake ingredients in a blender and mix until smooth
- Leave the batter to stand for five minutes
- Ladle into hot frying pan and make pancakes
- Top pancakes with the chopped strawberries and sprinkle desiccated coconut on top
- Serve with maple syrup and Coyo (coconut yoghurt)
